To cook a pork chop well, without it drying out, one of the best methods is to cook it in two stages: start by pan-frying, then finish in the oven.

This recipe adds flavour with mustard and thyme, with the cooking juices deglazed and reduced before serving.

Step by step recipe


Stage 1 - 2 min.
Pork chops in the oven : Stage 1
Brush 8 porks chops with oil, then salt and pepper on both sides.

Preheat the oven to 360°F (180°C).

Stage 2 - 2 min.

Using a frying pan that can also go in the oven, fry the chops on high heat until just starting to brown...

...for about 1 minute on each side.

Stage 4 - 2 min.

Remove the frying pan from the heat and brush both sides of the chops with mustard...

Stage 5 - 2 min.

...them sprinkle with thyme.

Stage 6 - 10 min.

Return the chops to the pan and cook in the oven for 10 minutes,

Heat the plates.

Transfer the chops to the serving plates and cover with aluminium foil. Leave to rest for 5 minutes and meanwhile, make the sauce:

Pour 2 glasses dry white wine into the frying pan...

Stage 9 - 4 min.

...deglaze, salt and pepper, then leave to reduce until only about a tablespoonful of liquid per person is left.

Check the seasoning.

Stage 10 - 2 min.

Pour 1 spoonful of sauce over each chop and serve without delay.
Remarks
If you don't have any thyme, you can use rosemary or even mixed herbs instead.
Keeping: 2 or 3 days in the fridge, covered with plastic film.
