Step by step recipe

The apples


Peel 500 g apple, cut into quarters, remove the core, and cut the quarters into strips, which you will pour into a salad bowl.

Zest 1 lemon over the apples and add its juice, mix, cover with a plate and set aside.

Preheat oven to 180°C (360°F).

The dough


Pour 100 g caster sugar, 1 tablespoon honey and 120 g butter into a separate bowl.

Whisk to combine.

Add 4 eggs, Vanilla extract and whisk again.

Sieve together over 150 g flour, 5 g baking powder, 2 pinches fine (or table) salt.

Mix again to obtain a homogeneous paste.

Finish by adding the apple pieces and any lemon juice that may be left at the bottom, mixing well with a pastry blender.

Pour the mixture into a carefully buttered or greased 20 cm (8-inch) diameter springform tin.

Remarks
If you like the taste, you can sprinkle the apples with a little cinnamon in step 1.

For a more distinctive flavour, replace the powdered sugar with cane sugar, and/or add 1 or 2 tablespoons of rum with the lemon juice to the apples.

If you're worried about the adhesion of your tin, line the bottom with a circle of baking paper.
