This very green salad recipe combines the soft texture of peas, avocado and hard-boiled eggs with the crunch of flaked almonds. Shavings of Mimolette add a colourful finishing touch with both flavour and bite.

Step by step recipe


Stage 1 - ⌛ 5 min.
Pea and avocado salad : Stage 1
Tip 30 g flakeds almonds into a small frying pan on high heat and toast them until they just begin to colour.

Set aside.

Stage 2 - ⌛ 3 min.
Pea and avocado salad : Stage 2
Cook 150 g peas in a pan of salted boiling water.

Stage 3 - ⌛ 5 min.

Then cool rapidly by plunging into cold water.

Drain and set aside.

Stage 4 - ⌛ 2 min.

Stage 5 - ⌛ 3 min.

Slice 1 spring onion (scallion) and set aside.

Stage 6 - ⌛ 5 min.

Peel 2 avocados and cut into thickish slices.

Stage 7 - ⌛ 1 min.

Put into a bowl and sprinkle with 2 tablespoons lemon juice.

Stage 8 - ⌛ 2 min.
Pea and avocado salad : Stage 8
Add the peas, almonds and spring onion.

Stage 9 - ⌛ 3 min.

Finish with shavings of 30 g Mimolette, the chopped parsley and 4 tablespoons french dressing (vinaigrette).

Mix well and your salad is ready.
Remarks
You can use Parmesan instead of the Mimolette, or another hard-paste cheese, such as Cheddar or Comté.

Similarly, the almonds can be replaced with pine nuts or walnuts, but it is important to try and keep them crunchy, so do be sure to toast them.
Keeping: 1 or 2 days in the fridge, covered with plastic film.
