Step by step recipe

Greek style sandwiches : Stage 1
Place 4 slices bread on a baking sheet.

Preheat the oven to 390°F (200°C).

Rub the top of each slice with ½ tomato to soak up the tomato juice.

Spread a layer of pesto on each slice of bread.

Spread the feta cheese on top.

Drizzle with olive oil and sprinkle with thyme.

Remarks
If you don't have purple pesto, use pesto sauce instead.

For a crispier texture, you can toast the toast in the toaster before rubbing it with the tomato.
