Here's a super-simple, but simply delicious recipe, where green beans, cooked on the side just tender, are mixed with a cream made from baked cherry tomatoes and feta cheese.

It's the vegetable-only version of the cherry tomato, olive and feta pasta you may already know.

For 4 people, you will need:
  • 1 cherry tomatoes 500 g cherry tomatoes
  • 2 cooked green beans 500 g cooked green beans
  • 3 olive oil 4 tablespoons olive oil
  • 4 feta 200 g feta
  • 5 dry oregano dry oregano
  • 6 salt salt

Step by step recipe


Stage 1 - 10 min.
Green beans with feta cream and cherry tomatoes : Stage 1
Wash 500 g cherry tomatoes, dry and cut in 2.

Sprinkle with salt and set aside.

Stage 2 - 30 min.

Prepare 500 g cooked green beans, cut into small pieces and set aside.

Preheat oven to 200°C (390°F).

In a large gratin dish, pour 4 tablespoons olive oil and place 200 g feta in the middle.

Arrange the cherry tomato halves all around, sprinkle with dried oregano, and drizzle generously with olive oil.

Stage 5 - 20 min.

Bake for 20 minutes at 200°C (390°F), and close the oven door once you've taken them out.

Stir the contents of the dish with a spoon to form the sauce.

Add the green beans and mix again.

Return the dish to the oven, still hot, for 3 to 5 minutes, just to warm everything up.

Remarks
Green beans can be cooked well in advance, or even the day before.

If you don't have oregano, sprinkle with herbes de Provence.
Keeping: Enjoy immediately, but can be stored in the fridge for 1 or 2 days, protected by cling film.
