The "Cantucci di Prato" or cookies of Prato are dry cookies with almonds, originating from the city of Prato in Italian Tuscany.

Quite easy to make and delicious, they keep very well, they can be eaten alone or as an accompaniment to a dessert such as a chocolate cream for example

Step by step recipe


Stage 1 - 3 min.
Cantucci di Prato
Preheat your oven to 180°C (360°F).

Sift together in a bowl 4 cups flour, 1 tablespoon baking powder and 4 pinches salt.

Stage 2 - 2 min.

Add 1 cup whole almonds and 4 eggs.

Stage 3 - 3 min.

Then 1 ¾ cup caster sugar and 23 cup butter melted.

Stage 4 - 5 min.

Mix, by hand or with a wooden spatula, until smooth.

Stage 5 - 2 min.

Place the dough on your lightly floured work surface, and cut it in 2.

Stage 6 - 4 min.

Form each piece of dough into a cylinder, about 4 cm (1.6 inches) in diameter, and place on a baking sheet protected by a sheet of baking paper.

Stage 7 - 35 min.

Bake in the oven for 30-35 minutes.

Stage 8 - 3 min.

Cut, still warm, in small pieces...

...and let cool on a rack.
Remarks
The dough of the cookies does not need to be kneaded, just mixed, it is useless to insist once the mixture made in the stage 4.

One can decline the recipe with other dry fruits, as the pistachio for example.

  • I made the 20 piece version and used cachou nuts because they're all I had available. Also some vanilla. Next time I will heat the oven to 170 fan as they browned too much too quickly at 180. Nevertheless they taste wonderful! Thank you for all your great recipes.
