Alongside the traditional basil pesto, here's a sorrel version, very fresh, with a delicious herbaceous taste.

For 505 g, you will need:
  • 1 sorrel 200 g sorrel
  • 2 pine nuts 100 g pine nuts
  • 3 olive oil 80 g olive oil
  • 4 vitamin C 3 g vitamin C (optional)
  • 5 lemon juice 2 tablespoons lemon juice
  • 6 Parmesan (Parmigiano Reggiano) 100 g Parmesan (Parmigiano Reggiano)
  • 7 salt salt
  • 8 pepper pepper
  • Total weight: 510 grams

Step by step recipe


Stage 1 - ⌛ 15 min.
Sorrel pesto : Stage 1

Stage 2 - ⌛ 7 min.
Sorrel pesto : Stage 2
Roast 100 g pine nuts in a frying pan over medium heat for 5-7 minutes, until golden.

Let cool.

Stage 3 - ⌛ 2 min.
Sorrel pesto : Stage 3
Pour 80 g olive oil into the bowl of a blender, followed by the pine nuts, and blend.

Stage 4 - ⌛ 2 min.
Sorrel pesto : Stage 4
Add sorrel leaves, 3 g vitamin C, 2 tablespoons lemon juice, 100 g Parmesan (Parmigiano Reggiano), salt and pepper.

Blend again...

Stage 5 - ⌛ 3 min.
Sorrel pesto : Stage 5
...until smooth, adjusting the amount of olive oil if necessary.

Check the seasoning and your sorrel pesto is ready.
Remarks
Vitamin C isn't essential, but it's very useful if you want to keep a beautiful green color, as sorrel quickly oxidizes and turns brown.
Keeping: 1 or 2 days in the fridge, in a closed container.
