Do this for each ball, then serve within half an hour, otherwise the cocoa will moisten and turn a very dark brown, far less appetizing.
Remarks
You can replace the sponge cookies with boudoirs.

This is a recipe that can easily be made into filled balls: As you roll them, insert a small piece of fruit purée or jam (for example) in the middle, which you've hardened in the freezer in small heaps.
Keeping: 1 or 2 days in the fridge, protected by cling film, without the cocoa.

What could be more basic than sausages and beans? This is a rustic French version using dried white haricot beans (or "mogettes") that are first boiled fast, then left to cook slowly with tomatoes and smoked sausages. The long cooking allows the smoky flavour of the sausages to gradually spread down into the beans - simply delicious!

Cream sauce with Vin Jaune
Cream sauce with Vin Jaune
This sauce made with Vin Jaune ("yellow wine") is emblematic of Comtoise cuisine from Eastern France. It combines the smoothness of cream with the slight acidity and typical flavour of the Vin Jaune. The tricky aspect of cooking with Vin Jaune is that its fugitive flavour tends to disappear when cooked for any length of time. You will notice that this recipe uses a particular way of finishing the sauce to limit this loss of flavour.
