Mashed Potatoes with Artichokes and Feta : Stage 1
Cut 4 artichokes heart into small cubes, then set aside.

Stage 2 - ⌛ 5 min.
Mashed Potatoes with Artichokes and Feta : Stage 2
Cut the 500 g cooked potatoes into large cubes, then set aside.

Stage 3 - ⌛ 3 min.
Mashed Potatoes with Artichokes and Feta : Stage 3
Grate or finely dice 100 g feta, then set aside.

Stage 4 - ⌛ 7 min.
Mashed Potatoes with Artichokes and Feta : Stage 4
In a large skillet over high heat, pour in 5 tablespoons olive oil, and when it's hot, add the diced potatoes.

Season with salt and pepper, then stir, and roughly mash the potatoes with a fork to your liking.

You can also let the potatoes brown a little if you prefer.

Add the artichoke hearts, stir, and let them heat through for 2 or 3 minutes.

...and stir until the feta melts and binds everything together.

Check the seasoning, then serve piping hot.
Remarks
Instead of chives—or along with them—you can use thyme or oregano, depending on your preference.
Keeping: 1 or 2 days in the refrigerator, covered with plastic wrap.
