This fairly simple recipe combines slices of avocado, spring onions, diced chicken and artichoke hearts in a good vinaigrette dressing.

Step by step recipe


Stage 1 - ⌛ 5 min.
Avocado, artichoke and chicken salad : Stage 1
Prepare 1 avocado, slice and put into a salad bowl.

Stage 2 - ⌛ 5 min.
Avocado, artichoke and chicken salad : Stage 2
Prepare 1 spring onion (scallion) and slice all of it (white and green parts). Add to the bowl.

Stage 3 - ⌛ 5 min.
Avocado, artichoke and chicken salad : Stage 3
Dice 200 g cooked chicken and add to the bowl.

Stage 4 - ⌛ 5 min.
Avocado, artichoke and chicken salad : Stage 4
Cut 200 g artichoke hearts into small pieces and add to the bowl.

Stage 5 - ⌛ 1 min.
Avocado, artichoke and chicken salad : Stage 5
Add the chopped chives.

Stage 6 - ⌛ 2 min.
Avocado, artichoke and chicken salad : Stage 6
Finish by adding 4 tablespoons french dressing (vinaigrette) and mix well. Your salad is ready.
Remarks
Instead of the vinaigrette, you might like to try rémoulade or rémoulette dressing.

If you don't have any chicken, you can use another type of white meat.
Keeping: Should be eaten the same day.
