Stage 2 - ⌛ 5 min.
Celeriac Rémoulade : Stage 2
Grate celeriac pieces, thinly or thickly according to taste (I prefer fairly thick).

Stage 3 - ⌛ 2 min.
Celeriac Rémoulade : Stage 3
Add chopped parsley.

Stage 4 - ⌛ 1 min.
Celeriac Rémoulade : Stage 4
Then the remoulade sauce, mix well.

It's ready.
Remarks
Ideally, the dish should be served as soon as the remoulade sauce has been added, because over time in contact with the celery it loses its creaminess.

Instead of parsley you can use other herbs like chopped chives or chervil.
Keeping: Several days, in a closed jar or protected by a plastic film, in the fridge.
Source: Home made.

This recipe really is "of the moment": the success of these small, highly-coloured cakes, in an infinite variety of flavours, is impressive. It's a recipe which needs some care, in order to produce a result worthy of a professional pastrychef. No problem, I will guide you through the recipe, particularly the tricky parts. This variety of flavours means that I test many alternatives, so don't be surprised if in the pictures the colour of the macarons changes, I used the best photograph available...
