Step by step recipe


Stage 1 - ⌛ 40 min.
Beans with tomatoes : Stage 1

Stage 2 - ⌛ 10 min.
Beans with tomatoes : Stage 2
Peel 250 g white beans.

Stage 3 - ⌛ 10 min.
Beans with tomatoes : Stage 3
Cut 250 g cooked chicken in small pieces.

Peel, wash and mince 1 shallot.

Stage 4 - ⌛ 2 min.
Beans with tomatoes : Stage 4
In a pan on medium fire, pour 2 tablespoons olive oil and when it's hot add minced shallot, salt and pepper.

Make cook for 1 or 2 minutes.

Stage 5 - ⌛ 2 min.
Beans with tomatoes : Stage 5
Add peeled tomatoes, salt again and slow fire.

Stage 6 - ⌛ 20 min.
Beans with tomatoes : Stage 6
Make cook slowly, stiring from time to time, covered, until tomatoes are soft.

Note: We leave pan covered to get more tomatoes juice, which will be absorbed by beans.

Stage 7 - ⌛ 20 min.
Beans with tomatoes : Stage 7
Add beans, stir and let cook until beans are soft (about 20 minutes).

Stage 8 - ⌛ 5 min.
Beans with tomatoes : Stage 8
Add chicken, stir well and let heat 5 more minutes.

Stage 9 - ⌛ 3 min.
Beans with tomatoes : Stage 9
During this time, mince parsley.

Stage 10 - ⌛ 3 min.
Beans with tomatoes : Stage 10
At the last time add parsley to the mixture, check seasoning and serve.
Remarks
If you don't have chicken, replace it with small pieces of bacon or just leave it out.

If you use tinned (canned) beans, just add them at the same time as the chicken.

For this recipe all proportions can be varied, so don't hesitate to change them according to your taste or what you have available.
