Step by step recipe


Stage 1 - ⌛ 3 min.
Dauphinoise potatoes with Serano ham : Stage 1
Put 300 g potato purée into a bowl and add 2 egg yolks.

Stage 2 - ⌛ 3 min.

Mix with a whisk until evenly mixed.

Stage 3 - ⌛ 10 min.

Fry the sliced ham in a frying pan until lightly crisped.

Break into pieces and put into a blender.

Blend until reduced to fine crumbs.

Add the ham crumbs to the potato...

Preheat the oven to 390°F (200°C).

Cook for about 10 minutes, watching for colouration.

Remarks
For the ham, I prefer Spanish Serano, but this is not essential.
Keeping: Only a few minutes, once cooked.
