Cranachan
Cranachan is a traditional Scottish dessert made with whipped cream, raspberries, rolled oats and whisky.

In this recipe, the oats are made into a nougatine before being incorporated into the cream.

Step by step recipe


Stage 1 - 4 min.
Cranachan
Put 150 g raspberries into a bowl, sprinkle 2 tablespoons caster sugar and 2 tablespoons whisky over then set aside.

Stage 2 - 3 min.
Cranachan
Preheat the oven to 300°F (150°C).

Spread 100 g rolled oats out on a baking sheet, sprinkle with 4 tablespoons caster sugar and put in the oven.

Stage 3 - 15 min.
Cranachan
Leave the sugar to caramelize in the oven to make the oat nougatine.

Stage 4 - 3 min.
Cranachan
When this is golden brown, remove from the oven and break up into coarse crumbs.

Set aside.

Stage 5 - 5 min.

Begin assembling the dessert: put a layer of Chantilly (whipped cream) in the bottom of each glass.

Stage 6 - 5 min.

Add a layer of raspberries and scatter some nougatine on top.

Stage 7 - 7 min.
Cranachan
Repeat this operation, finishing with a layer of whipped cream. Decorate with a raspberry and a pinch of nougatine.

Prepare some hot whisky with honey by melting 100 ml honey in 200 ml whisky (preferably Scottish) over low heat.

Serve immediately.
And to drink?
A small glass of whisky with honey.
