For 90 truffles, you will need:
  • 1 chocolate ganache 900 g chocolate ganache
  • 2 whole almonds 90 g whole almonds
  • 3 pistachios 90 g pistachios
  • 4 powdered cocoa 90 g powdered cocoa
  • Total weight: 1,170 grams

Step by step recipe


Stage 1 - 2 hours
Chocolate Truffles
Prepare 900 g chocolate ganache, pour into a dish and refrigerate for at least 2 hours or overnight to set.

Stage 2 - 15 min.
Chocolate Truffles
Dry roast 90 g whole almonds and 90 g pistachios for 15 minutes in the oven at 300°F (150°C).

Stage 3 - 5 min.

Chop the nuts coarsly and set aside.

Take out about a teaspoonful of ganache.

Form roughly into a ball with your fingers (latex gloves will help keep your hands clean.).
