Step by step recipe


Stage 1 - 10 min.
Quick courgette soup with cheese : Photo of step #1
Wash 1 courgette, scrub with scratch sponge, cut ends and discard them.

Stage 2 - 10 min.

Slice courgettes fairly thinly (about 1/2 cm. or 1/4 inch), put in a pan, cover with 333 ml water and 13 chicken stock cube, salt and bring to the boil.

Cook until courgettes are quite soft.

Stage 3 - 3 min.

Blenduntil smooth.

Stage 4 - 3 min.

Add 1 tablespoon Mont d'Or cheese, and blend again.

Stage 5 - 1 min.

Check seasoning, it's ready !
Remarks
Mont d'or cheese can easily be replaced by other soft cheese like Morbier or Reblochon, or 2 - 3 portions of "Laughing Cow".
