Step by step recipe


Stage 1 - 5 min.
Green and red salad with sardines and eggs mimosa
Finely chop 2 hard-boiled eggs and set aside.

Stage 2 - 7 min.

Dice 1 slice bread and fry with 20.64 ml butter in a small frying pan on medium heat until golden brown.

Set aside.

Stage 3 - 8 min.

Peel and grate 2 raw beetroots and put in a salad bowl.

Stage 4 - 2 min.

Shred ("en chiffonade") 5 leaves lettuce .

Stage 5 - 1 min.

Add to the bowl.

Stage 6 - 2 min.

Add 6 sardines in oil cut into pieces.

Stage 7 - 2 min.

Add the croutons, herbs and vinaigrette dressing to taste. Mix.

Stage 8
Green and red salad with sardines and eggs mimosa
Serve plated up ("à l'assiette"), scattering the eggs mimosa on top.
Remarks
Note that it is worth trying to avoid mixing the eggs mimosa with the rest of the salad, to keep their lovely yellow colour. Otherwise the beetroot will dye them pink.
Keeping: Should be eaten as soon as possible while the croutons are still crunchy.
