Step by step recipe


Stage 1 - 5 min.
Shiro-goma salad
Cut 500 g chicken breast into small pieces.

Stage 2 - 5 min.
Shiro-goma salad
Pour into a salad bowl, add the juice and zest of 1 lime, 2 tablespoons sesame seeds, 2 tablespoons soy sauce, then season with pepper and mix.

Cover or film and chill in the fridge.

Stage 3 - 10 min.
Shiro-goma salad
Prepare 2 tomatoes, cut into small pieces, and lightly salt before stirring.

Set aside.

Stage 4 - 5 min.
Shiro-goma salad
Cut 6 leaves lettuce into chiffonade and pour into a salad bowl.

Stage 5 - 3 min.

Add chopped 2 hard-boiled eggs.

Stage 6 - 4 min.

Prepare and chop ½ red onion and 1 spring onion (scallion), then add them to the bowl.

Stage 7 - 1 min.

Cut 1 slice bread into small pieces...

Stage 8 - 5 min.

...and brown them in a frying pan over medium heat with 2 tablespoons sesame oil.

When they've browned to your liking, pour them into the salad bowl.

Stage 9 - 1 min.

Return the pan to the heat, add a little sesame oil if necessary, and pour in the chicken pieces.

Stage 10 - 8 min.
Shiro-goma salad
Brown them well, then pour them into the bowl.

Stage 11 - 2 min.
Shiro-goma salad
Add the coarsely chopped coriander and tomato.

Stage 12 - 2 min.
Shiro-goma salad
Finish with the vinaigrette, mix well and your salad is ready.
Remarks
The chicken marinade can be made the day before.

If you don't like coriander, replace it with parsley or lemon balm.

Sesame seeds can be roasted before adding to the marinade.
