For 18 people, you will need:
  • 1 whole milk 3 litres whole milk
  • 2 brown sugar 300 g brown sugar
  • 3 rice 600 g rice
  • 4 stars anise 9 stars anise
  • 5 greens cardamoms beans 30 greens cardamoms beans
  • 6 cinnamon 12 pinches cinnamon
  • 7 raisins 150 g raisins
  • 8 whole almonds 150 g whole almonds
  • 9 cashew nuts 150 g cashew nuts
  • Total weight: 4,395 grams

Step by step recipe


Stage 1 - 20 min.
Indian rice pudding : Stage 1
In a large saucepan over low heat, pour in 3 litres whole milk, add 300 g brown sugar, 600 g rice, 9 stars anise, 30 greens cardamoms beans, 12 pinches cinnamon and 150 g raisins.

Cook gently, uncovered, stirring occasionally.

Stage 2 - 15 min.

Meanwhile, start your oven at 150°C (300°F) and place a baking sheet on which you've poured 150 g whole almonds and 150 g cashew nuts to roast for about 15 minutes (no need to preheat the oven for this).

Stage 3 - 3 min.

Once the dried fruit has cooled, chop coarsely.

Stage 4 - 10 min.
Indian rice pudding : Stage 4
Continue cooking the rice until tender and creamy.

Stage 5 - 1 min.

Add the chopped dried fruit...

Stage 6 - 1 min.

...and mix it all together.

Remarks
If possible, use basmati rice to get even more in the spirit of Indian cuisine.
Keeping: 1 or 2 days in the fridge, protected by cling film.

  • It's not really the subject of this recipe, but yes, you can marinate very well in yoghurt, often with spices for the tenderness and flavour of the meat
