This version of mayonnaise, as creamy as ever but with a delicious avocado flavor, is a perfect accompaniment to fish, vegetables and even canapés.

Step by step recipe


Stage 1 - 5 min.
Avocado mayonnaise
In a high-sided container, pour ½ Egg, ½ teaspoon Mustard, 0 litre oil, salt and pepper.

Stage 2 - 1 min.
Avocado mayonnaise
Blend for a few seconds to set the mayonnaise.

Stage 3 - 3 min.
Avocado mayonnaise
Prepare ½ avocado, cut it into pieces and add it, along with (possibly) ½ pinch vitamin C , and ½ tablespoon lime juice.

Stage 4 - 1 min.
Avocado mayonnaise
Blend again for a few seconds to incorporate the avocado...

Avocado mayonnaise
... your avocado mayonnaise is ready.
Remarks
For the oil, use a neutral one (peanut, for example), but for an even stronger taste, try avocado oil.

If you like this combination, add a little chopped fresh coriander at the end.
Keeping
1 or 2 days in the fridge, protected by cling film.
