Cantuccini, or cantucci, are those little golden, ultra-crisp Italian cookies from Tuscany, filled with whole roasted almonds, and with that rustic yet gourmet taste found in Italian cuisine.
This is a biscuit in the truest sense of the word, as it will be baked 2 times.

Step by step recipe


Stage 1 - ⌛ 10 min.
Cantucci : Stage 1
Preheat your oven to 170°C (340°F).

Pour 100 g whole almonds onto a baking sheet, and place in the oven for 10 minutes to roast.

Stage 2 - ⌛ 5 min.
Cantucci : Stage 2
Leave to cool, then chop very coarsely.

Set aside and leave the oven on.

Stage 3 - ⌛ 4 min.
Cantucci : Stage 3
In a bowl, first pour in the powders: 200 g flour, 90 g caster sugar, 10 g vanilla sugar, 6 g baking powder and 2 pinches salt.

Whisk to combine.

Stage 4 - ⌛ 3 min.
Cantucci : Stage 4
Add the almonds, 1 tablespoon honey, 2 eggs and the zests of ½ lemon and ½ orange.

Stage 5 - ⌛ 4 min.
Cantucci : Stage 5
Mix by hand, forming a sort of cylinder.

Stage 6 - ⌛ 2 min.
Cantucci : Stage 6
Place it on a sheet of baking paper on a baking sheet, and shape it into a roughly rectangular shape.

Stage 7 - ⌛ 20 min.
Cantucci : Stage 7
Bake for the first time at 170°C (340°F) for 20 minutes.

Remove from oven and turn down to 160°C (320°F).

Stage 8 - ⌛ 15 min.
Cantucci : Stage 8
Leave to cool for 15 minutes.

Stage 9 - ⌛ 3 min.
Cantucci : Stage 9
Cut into slices about 1 cm thick using a serrated knife.

Stage 10 - ⌛ 2 min.
Cantucci : Stage 10
Place the slices on the baking sheet.

Stage 11 - ⌛ 10 min.
Cantucci : Stage 11
Bake for the second time at 160°C (320°F) for 10 minutes.

Stage 12
Cantucci : Stage 12
Cool or chill before serving.
Remarks
You can replace the almonds with a mixture of other dried fruits: almonds, pistachios, pine nuts, walnuts...
Keeping: Several days in a jar or closed metal box.
