Spinach cooked on the side, added at the last minute to a delicious, creamy sauce, with grated Comté cheese and diced feta cheese.

Step by step recipe


Stage 1 - ⌛ 10 min.
Creamed spinach with two cheeses : Stage 1
Prepare and chop 1 shallot.

Chop 2 hard-boiled eggs.

Grate 50 g Comté cheese and dice 100 g feta.

Stage 2 - ⌛ 1 min.

In a frying pan over medium heat, melt 30 g butter, and when hot, add the chopped shallot, salt and pepper.

Cook for 1 minute, without browning.

Stage 3 - ⌛ 3 min.

Pour in 1 glass dry white wine, and reduce by half.

Stage 4 - ⌛ 3 min.

Pour in 250 g liquid cream, stir and bring to the boil.

Stage 5 - ⌛ 6 min.
Creamed spinach with two cheeses : Stage 5
Pour in the grated Comté cheese and stir until it melts, then do the same with the feta.

Check the seasoning and heat the plates.

Stage 6 - ⌛ 3 min.

Add 750 g cooked spinach, stir gently to warm them up...

Stage 7 - ⌛ 4 min.

...and then arrange the spinach on the plates, place a few chopped hard-boiled eggs on top and drizzle with a little sauce.

Serve immediately.
Remarks
You can also grate the feta cheese in step 1, but it's not easy to do so, so you cut it into small cubes.

Don't leave the spinach too long in the sauce once it's been reheated, otherwise it will give off water and your sauce won't be as thick.

You can of course change the cheese to suit your taste, but don't hesitate to try a blue-veined cheese like Gorgonzola.
Keeping: Enjoy immediately, but can be reheated.
