  • 1 cooked potatoes 500 g cooked potatoes
  • 2 olive oil olive oil
  • 3 purple globe artichokes 750 g purple globe artichokes
  • 4 Parmesan (Parmigiano Reggiano) 50 g Parmesan (Parmigiano Reggiano)
  • Total weight: 1,300 grams

Step by step recipe


Stage 1 - ⌛ 5 min.
Gratin of purple artichokes : Stage 1
Preheat the oven to 390°F (200°C).

Butter a gratin dish.

Slice 500 g cooked potatoes and spread in the bottom of the dish.

Pour a generous trickle of olive oil over.

Stage 2 - ⌛ 15 min.
Gratin of purple artichokes : Stage 2
Prepare 750 g purple globe artichokes and spread in a layer over the potatoes.

Stage 3 - ⌛ 2 min.
Gratin of purple artichokes : Stage 3
Grate 50 g Parmesan (Parmigiano Reggiano) over the top.

Stage 4 - ⌛ 20 min.
Gratin of purple artichokes : Stage 4
Cook in the oven for about 20 minutes...

Stage 5
Gratin of purple artichokes : Stage 5
...until the top is nicely browned.
Remarks
For a richer version of this gratin, pour some crème fraiche or bechamel sauce over the potatoes.

If you don't have purple artichokes, normal artichoke hearts will do.
Keeping: A few hours in the fridge, covered with plastic film.
