This is almost as simple to make as a plain mayonnaise, but with the double lemon flavour of both zest and juice for a delicate, fresh tang.

For 300 g, you will need:

1 1 egg
2 1 tablespoon mustard
3 200 ml oil
4 Salt
5 Pepper
6 1 lemon
Total weight: 395 grams

Step by step recipe

Stage 1 - ⌛ 3 min.

Use a jug or high-sided container. Add 1 egg, 1 tablespoon mustard, 200 ml oil, Salt and Pepper.

Grate the zest of a lemon into the container.

Stage 2 - ⌛ 1 min.

Squeeze one tablespoonful of lemon juice and add this.

Stage 3 - ⌛ 1 min.

Blend for a few seconds...

Stage 4

...and your lemon mayonnaise is ready.

Remarks

If you'd like you mayonnaise extra tangy, you can add more lemon juice, up to two tablespoonsful.

Keeping: 1 or 2 days in the fridge, covered with plastic film. .
