This salad is all green and fresh, with diced avocado, lettuce, spring onion and the softness of pieces of hard-boiled egg.

The flavour is brought out further with a lime and olive-oil dressing, pepped up with a touch of Tabasco.

Step by step recipe


Stage 1 - ⌛ 5 min.
Green avocado salad : Stage 1
Peel 2 avocados and cut the flesh into large dice.

Stage 2 - ⌛ 5 min.

Prepare 200 g lettuce and shred.

Stage 3 - ⌛ 5 min.

Peel and finely chop 1 spring onion (scallion).

Stage 4 - ⌛ 3 min.

Roughly chop the parsley leaves.

Stage 5 - ⌛ 2 min.

Put into a salad bowl: avocado, lettuce, onion and parsley.

Stage 6 - ⌛ 2 min.

Add the 4 hard-boiled eggs cut into pieces.

Stage 7 - ⌛ 3 min.

Prepare the dressing by mixing the juice of 1 lime, 5 tablespoons olive oil, 1 teaspoon Tabasco, salt and pepper rapidly with a fork.

Stage 8 - ⌛ 2 min.
Green avocado salad : Stage 8
Pour the dressing over the salad, mix well and serve without delay.
Remarks
Do adapt the Tabasco to suit your taste and whether you prefer it hot or milder.

If you prepare this salad in advance, try to keep it covered, with the diced avocado sprinkled with lime juice to prevent it turning brown. Only add the dressing at the last minute.
Keeping: Should be eaten the same day.
