Step by step recipe

Stage 1 - ⌛ 5 min.
Roasted cauliflower : Stage 1
Trim 1 cauliflower, only keeping the best of the leaves around the base and cutting these back to half their length.

Stage 2 - ⌛ 1 min.
Roasted cauliflower : Stage 2
Put a small dessert ring in the bottom of a large pan of salted boiling water.

Stage 3 - ⌛ 10 min.
Roasted cauliflower : Stage 3
Sit the cauliflower on the ring, head downwards. It doesn't matter if the end is slighty above the water level.

Cook until barely tender.

Stage 4 - ⌛ 10 min.
Roasted cauliflower : Stage 4
Take out of the pan and drain, still head downwards, in a colander.

Stage 5 - ⌛ 3 min.
Roasted cauliflower : Stage 5
Preheat the oven to 360°F (180°C).

Put 30 g butter in a ramekin and melt (in the microwave, for example). Add 3 tablespoons olive oil and mix well.

Stage 6 - ⌛ 3 min.
Roasted cauliflower : Stage 6
Sit the cauliflower right way up on a sheet of cooking parchment laid on a baking sheet.

Use a brush to coat the cauliflower thoroughly all over with the butter-oil mixture, including the leaves. Put in the oven.

Stage 7 - ⌛ 2 hours
Roasted cauliflower : Stage 7
Take out the baking sheet 2 or 3 times during cooking and brush the cauliflower again with the butter+oil.

Stage 8
Roasted cauliflower : Stage 8
Take the cauliflower out of the oven when it is nicely browned (this will take an hour and a half to 2 hours) and the surrounding leaves are charred and crispy, almost burnt.

Stage 9
Roasted cauliflower : Stage 9
To serve, place the cauliflower in the centre of the table for everyone to help themselves to well-roasted morsels...

Stage 10
Roasted cauliflower : Stage 10
...and dip them in the green sauce before eating.

You'll love this!
Remarks
You can serve this with lemon mayonnaise or rémoulade dressing instead of the green sauce.
Keeping: Should be eaten as soon as it comes out of the oven.

Roast pork with sage, cooked in a bag.
Pork goes particularly well with sage (true for white meats in general), but in this recipe, we'll bring out these flavours to the full by slow-cooking in a bag. The pork roasting joint is simply salted and peppered before being put in the bag and cooked for hours at low temperature. The delicious cooking juices produced is used for braising the vegetables to serve with the roast: turnips and purple artichokes. In this recipe, everything is done gently and at an unhurried pace: this is real slow...

How to cook caramelized puff pastry well
How to cook caramelized puff pastry well
When puff pastry is caramelized to use in patisseries like millefeuille, French chefs call it a "feuilletage" (which means "lamination" or "leafing"). This is baked on its own before being assembled with cream, fruit, etc. The baking needs to be carefully managed: the pastry should puff into layers, but not swell too much (just a few millimeters normally). To achieve this, we need to follow a special method that I have explained for you here.

Crème brulée
Crème brulée
Crème brûlée (burned cream) is quite easy to prepare: it's a simple egg-cream dessert. The only difficulty is in making the delicious crunchy caramel layer on top. The perfect crème brulée (for me) is a cold and soft cream, with on top a nice hot caramel crust. This is a completely new version of the former recipe, with video.
