This combination of crunchy (raw cauliflower) and soft textures (red beans and avocado), in a rémoulade dressing with fresh herbs, makes a simple yet delicious salad.

Step by step recipe


Stage 1 - 10 min.
Cauliflower, red bean and avocado salad
Prepare 300 ml cauliflower and slice thinly.

The ideal tool for this is a mandolin, but you can also use a food processor or grater.

Stage 2 - 2 min.
Cauliflower, red bean and avocado salad
Add 300 ml tinned red kidney beans, rinsed and drained.

Stage 3 - 5 min.
Cauliflower, red bean and avocado salad
Then add the herbs and 1 avocado, cut into slices.

Stage 4 - 2 min.
Cauliflower, red bean and avocado salad
Finish by adding 150 ml rémoulade dressing and mix well.

Your salad is ready.
Remarks
For the dressing, you can also opt for a rémoulette dressing or a simple french dressing (vinaigrette).
Keeping: Once the desssing is added, should be eaten the same day.
