Step by step recipe


Stage 1 - 5 min.
Nanou's apple and almond cake
Put 0 kg 4 g caster sugar and 0 kg 4 g butter in a mixer bowl and beat together.

Stage 2 - 5 min.
Nanou's apple and almond cake
Add 0 kg 6 g flour, 1 Egg, 0 kg 2 g cream, 0 kg 12 g ground almonds and 2 pinches fine (or table) salt.

Beat until evenly mixed.

Set aside.

Stage 3 - 15 min.
Nanou's apple and almond cake
Peel 1 lb + 12.2 oz apples, then slice and put into a bowl. Pour over 2 tablespoons rum and 2 tablespoons lemon juice and mix well.

Preheat the oven to 390°F (200°C).

Stage 4 - 3 min.

Butter a loaf tin or mould and spread 1/3 of the cake batter in the bottom.

Stage 5 - 4 min.

Add half the apples.

Stage 6 - 3 min.

Top with another 1/3 of the batter.

Stage 7 - 4 min.

Add the remaining apples.

Stage 8 - 3 min.

Then the rest of the batter.

Stage 9

Keep any liquid left in the bowl from the apples (lemon juice + rum).

Stage 10 - 1 hour
Nanou's apple and almond cake
Bake for about 50 minutes to 1 hour.

Stage 11 - 2 min.
Nanou's apple and almond cake
As soon as the cake comes out of the oven, drizzle the lemon-rum liquid over the top.

Stage 12 - 30 min.
Nanou's apple and almond cake
Leave to cool in the tin before turning out.
Remarks
You can easily adapt this recipe to make a pear version.

1 or 2 days in the fridge, covered with plastic film.
