Step by step recipe


Stage 1 - 5 min.
Green and red salad with sardines and eggs mimosa
Finely chop 4 hard-boiled eggs and set aside.

Stage 2 - 7 min.
Green and red salad with sardines and eggs mimosa
Dice 2 slices bread and fry with 41.28 ml butter in a small frying pan on medium heat until golden brown.

Set aside.

Stage 3 - 8 min.
Green and red salad with sardines and eggs mimosa
Peel and grate 4 raw beetroots and put in a salad bowl.

Stage 4 - 2 min.
Green and red salad with sardines and eggs mimosa
Shred ("en chiffonade") 10 leaves lettuce .

Stage 5 - 1 min.
Green and red salad with sardines and eggs mimosa
Add to the bowl.

Stage 6 - 2 min.
Green and red salad with sardines and eggs mimosa
Add 12 sardines in oil cut into pieces.

Stage 7 - 2 min.
Green and red salad with sardines and eggs mimosa
Add the croutons, herbs and vinaigrette dressing to taste. Mix.

Stage 8
Green and red salad with sardines and eggs mimosa
Serve plated up ("à l'assiette"), scattering the eggs mimosa on top.
Remarks
Note that it is worth trying to avoid mixing the eggs mimosa with the rest of the salad, to keep their lovely yellow colour. Otherwise the beetroot will dye them pink.
Keeping
Should be eaten as soon as possible while the croutons are still crunchy.
