  • 2 green asparagus spears 4.4 oz green asparagus spears
  • 3 Parmesan (Parmigiano Reggiano) 1.5 tablespoon Parmesan (Parmigiano Reggiano)
  • 4 olive oil 1.5 tablespoon olive oil
  • 5 salt salt
  • 6 pepper pepper

Step by step recipe


Stage 1 - 10 min.
Scallops with green asparagus tips and parmesan
Peel 4.4 oz green asparagus spears, and cook in salted boiling water until they are just cooked (still a bit crunchy).

Stage 2 - 2 min.
Scallops with green asparagus tips and parmesan
When done, remove from cooking water and put ito very cold water.

Stage 3 - 2 min.

Then drain and dry them.

Stage 4 - 5 min.

Cut asparagus tips and set aside.

Heat serving plates.

Stage 5 - 5 min.

Prepare 8 scallops by cleaning and drying them.

Stage 6 - 4 min.

Put 1.5 tablespoon olive oil in a large frying pan.

Put on high heat until lightly smoking, this is important for sealing the scallops.

Place scallops in the pan, and fry 1 or 2 minutes on each side until they are golden brown.

Stage 7 - 2 min.

Reduce a the heat a little, season, and add asparagus tips.

Stage 8 - 3 min.
Scallops with green asparagus tips and parmesan
Grate on or add 1.5 tablespoon Parmesan (Parmigiano Reggiano), and melt by stirring for 1 or 2 minutes.

Stage 9 - 5 min.
Scallops with green asparagus tips and parmesan
Divide between hot serving plates, and serve as soon as possible.
Remarks
Any left over asparagus can be used to make soup. For this, cut into small pieces and proceed as for pumpkin soup.
Keeping: Once cooked, a few minutes.
