Mug cakes are fun and quick to make. They cook in the microwave in about a minute and a half. This almond version is similar to the small cakes known as financiers.

Step by step recipe


Stage 1
Almond mug cake for Mary
Melt 2.9 oz butter, add 2 eggs and 4 tablespoons cream and mix well.

Stage 2 - 3 min.
Almond mug cake for Mary
Mix together 4 tablespoons caster sugar, 2 tablespoons ground almonds, 4 tablespoons flour and ½ teaspoon baking powder.

Stage 3 - 1 min.

Mix thoroughly.

Stage 4 - 3 min.

Divide the mixture evenly between the mugs.

Stage 5 - 2 min.

Cook one mug at a time (this is important) for 1 minute 30 seconds each at 850 Watts.

Stage 6
Almond mug cake for Mary
Leave to cool for a few minutes before eating as the cake will be boiling in the centre when you take it out of the oven.
