Step by step recipe


Stage 1 - 5 min.
Lentil and cold-meat salad
Cut 3.5 oz cooked meat into small chunks. You can use any leftover meat (beef, chicken, pork...), or even a mixture.

Stage 2 - 5 min.
Lentil and cold-meat salad
Put the meat into a bowl. Slice 1 hard-boiled egg and add with ½ shallot, finely chopped.

Stage 3 - 30 min.
Lentil and cold-meat salad
Boil 5.1 oz green lentils in a large quantity of salted water. When cooked (tender), drain thoroughly.

Stage 4 - 3 min.
Lentil and cold-meat salad
Add the lentils to the bowl, then add the chopped parsley and 3 tablespoons French dressing (vinaigrette). Stir round well and it's ready.
Remarks
This is even better if the lentils are still warm. Serve straight after the final mixing, if possible.
Keeping
2 or 3 days in the fridge, covered with plastic film.
