Step by step recipe


Stage 1 - 5 min.
Lentil and cold-meat salad
Cut 1 ¾ cup cooked meat into small chunks. You can use any leftover meat (beef, chicken, pork...), or even a mixture.

Stage 2 - 5 min.
Lentil and cold-meat salad
Put the meat into a bowl. Slice 4 hard-boiled eggs and add with 2 shallots, finely chopped.

Stage 3 - 30 min.
Lentil and cold-meat salad
Boil 2 ½ cups green lentils in a large quantity of salted water. When cooked (tender), drain thoroughly.

Stage 4 - 3 min.
Lentil and cold-meat salad
Add the lentils to the bowl, then add the chopped parsley and 10 tablespoons French dressing (vinaigrette). Stir round well and it's ready.
Remarks
This is even better if the lentils are still warm. Serve straight after the final mixing, if possible.
Keeping: 2 or 3 days in the fridge, covered with plastic film.
