Step by step recipe


Stage 1 - 5 min.
Gingerbread
Preheat oven to 180°C or 356°F.

Melt 61.92 ml butter in a small pan on low heat, then set aside.

Stage 2 - 3 min.
Gingerbread
In another pan, put 125 ml honey.

Stage 3 - 3 min.
Gingerbread
Heat 100 ml water and pour into pan with honey. Add 60 ml brown sugar, mix well to dissolve, and add 1 tablespoon rum and a pinch of salt.

Stage 4 - 3 min.
Gingerbread
Pour this mixture into a food processor bowl, then add 195 ml flour, 195 ml rye flour and 10 ml baking powder.

Stage 5 - 2 min.

Add 12 ml gingerbread spice mix.

Stage 6 - 2 min.
Gingerbread
Then 1 egg and melted butter, not too hot.

Stage 7 - 3 min.
Gingerbread
Switch on food processor (if you have a Kenwood, use the "K" Beater) and knead at slow speed 2 or 3 minutes, until mix is homogeneous.

Stage 8 - 3 min.
Gingerbread
Pour mixture into a cake mould, non-stick if possible.

Stage 9 - 40 min.
Gingerbread
Cook for about 40 minutes.

Don't turn out immediately, but allow cool slightly first.
Remarks
Afficionados of ginger bread (like Robert) say that it's better not too fresh (the next day maybe), sliced and buttered.
