Step by step recipe


Stage 1 - 5 min.
Gingerbread
Preheat oven to 180°C or 356°F.

Melt 120 g butter in a small pan on low heat, then set aside.

Stage 2 - 3 min.

In another pan, put 250 g honey.

Gingerbread
Heat 200 g water and pour into pan with honey. Add 120 g brown sugar, mix well to dissolve, and add 2 tablespoons rum and a pinch of salt.

Stage 4 - 3 min.

Pour this mixture into a food processor bowl, then add 250 g flour, 250 g rye flour and 20 g baking powder.

Stage 5 - 2 min.

Add 24 g gingerbread spice mix.

Stage 6 - 2 min.

Then 2 eggs and melted butter, not too hot.

Stage 7 - 3 min.

Switch on food processor (if you have a Kenwood, use the "K" Beater) and knead at slow speed 2 or 3 minutes, until mix is homogeneous.

Stage 8 - 3 min.
Gingerbread
Pour mixture into a cake mould, non-stick if possible.

Stage 9 - 40 min.
Gingerbread
Cook for about 40 minutes.

Don't turn out immediately, but allow cool slightly first.
Remarks
Afficionados of ginger bread (like Robert) say that it's better not too fresh (the next day maybe), sliced and buttered.
Keeping: Several days in a towel bag.
