Melt-in-the-mouth haricot beans, pan-fried lardons and croutons with chives and a good vinaigrette dressing.

Step by step recipe


Stage 1 - ⌛ 15 min.
Warm haricot bean salad : Stage 1
Cook 400 g white beans until soft.

Stage 2 - ⌛ 1 min.

Drain and keep hot.

Stage 3 - ⌛ 8 min.

Pour 1 tablespoon olive oil into a small frying pan on high heat. When really hot, add 150 g small pieces of bacon and fry.

Stage 4 - ⌛ 8 min.

Meanwhile melt 50 g butter in another pan on high heat, then add 2 slices bread cut into cubes.

Fry until lightly browned.

Stage 5 - ⌛ 2 min.

Put the beans into a salad bowl, then add the lardons with their cooking fat.

Stage 6 - ⌛ 2 min.
Warm haricot bean salad : Stage 6
Finsh by adding the croutons, the chopped chives and 5 tablespoons french dressing (vinaigrette).

Mix well and serve immediately while still warm.
Remarks
If you are using dried beans, leave them to soak overnight in cold water before cooking.
Keeping: 1 or 2 days in the fridge, covered with plastic film.
