Variation on muffins recipe. In this version each one is filled with a dark chocolate ganache.

Step by step recipe


Stage 1 - ⌛ 35 min.
Chocolate muffins : Stage 1
Prepare 450 g muffin dough.

Stage 2 - ⌛ 5 min.
Chocolate muffins : Stage 2
Preheat oven to 392°F or 200°C.

Into a bowl put: 70 g dark chocolate cut in small pieces, 20 g butter, 10 g vanilla sugar and 30 g cream.

Stage 3 - ⌛ 5 min.
Chocolate muffins : Stage 3
Melt in a bain-marie or microwave oven, stir slowly to get a soft mix: the dark chocolate ganache.

Leave to cool and thicken slightly.

Stage 4 - ⌛ 5 min.
Chocolate muffins : Stage 4
Put a little muffin dough in the bottom of your moulds, just to cover the bottom.

Stage 5 - ⌛ 5 min.
Chocolate muffins : Stage 5
Add ½ teaspoon ganache.

Be careful to put not too much ganache, otherwise it might spill out and burn during cooking.

Stage 6 - ⌛ 5 min.
Chocolate muffins : Stage 6
Add muffin dough to completely cover chocolate.

Stage 7 - ⌛ 15 min.
Chocolate muffins : Stage 7
Put in the oven and cook for about 15 minutes.

Stage 8
Chocolate muffins : Stage 8
Turn out and allow to cool (but not too much) on a rack.

Muffins are much better served warm.
Remarks
If you prefer milk chocolate, you can make the ganache with this, but only use half the quantity of cream (15 g).
Keeping: 1 or 2 days in a closed metal box.
