  • 1 ham 4 slices ham
  • 2 olive oil 6 tablespoons olive oil
  • 3 sage 2 bunches sage
  • 4 peeled and chopped tomatoes 800 g peeled and chopped tomatoes
  • 5 cooked rice 800 g cooked rice
  • 6 Parmesan (Parmigiano Reggiano) 100 g Parmesan (Parmigiano Reggiano)
  • 7 salt salt
  • 8 pepper pepper
  • Total weight: 1,990 grams

Step by step recipe


Stage 1 - 2 min.
Rice à l'italienne
Cut 4 slices ham into small pieces.

Stage 2 - 5 min.
Rice à l'italienne
Pour 6 tablespoons olive oil into a large pan on high heat. When hot, add the ham and sage leaves.

Fry, stirring from time to time.

Stage 3 - 10 min.
Rice à l'italienne
Add 800 g peeled and chopped tomatoes and mix well. Turn down the heat and leave uncovered to reduce gently for about 10 minutes.

Stage 4 - 2 min.
Rice à l'italienne
Remove and discard the sage, then add 800 g cooked rice.

Stage 5 - 5 min.
Rice à l'italienne
Mix well and leave to heat through for a few minutes.

Just before serving, add the grated 100 g Parmesan (Parmigiano Reggiano), mix once more then check the seasoning.
Remarks
You can use tomato sauce for pizzas instead of the chopped tomatoes.

If you don't have any sage, use a spray of parsley, complete with stalks.
Keeping: A few days in the fridge, covered with plastic film.
