Step by step recipe


Stage 1 - 4 min.
Bisto-style canapés
Fry 6 slices cured ham on both sides in a frying pan with no added fat.

Set aside.

The bread

Slice 2 baguette into fairly thin rounds (about 1/4 inch or 1/2 cm).

Stage 3 - 10 min.

Brush both sides of each slice with oil.

Using the same pan as for the ham on high heat, fry the bread on both sides.

Do this in batches if necessary, transferring the cooked slices onto a sheet of cooking parchment laid on a baking sheet.

The eggs

In a bowl, beat together 9 Eggs, 6 tablespoons liquid cream, salt and pepper.

Still using the same frying pan, but now on medium heat, pour in 2.2 oz butter. When good and hot, add the beaten eggs.

Stage 7 - 4 min.

Turn down the heat and gently pull the eggs from the edge in towards the centre so that they cook evenly.

Stop as soon as they begin to set; do not overcook.

Preheat the oven to 360°F (180°C).

Assemble the canapés

Put a piece of fried ham on each slice of bread.

Add a little of the egg.

Top with a slice of cheese.

Cooking

Pop in the oven for 10 minutes, just until the cheese is melted.

Serve either hot or warm.
Remarks
For the cheese, use whatever you like: sliced if soft-paste, grated if hard.

If you prefer butter to oil, you can butter the bread slices in stage 3.
