A very tasty version of bruschetta with herbs and mozzarella.

Step by step recipe


Stage 1 - 5 min.
Bruschetta and mozzarella
Wash and dry 200 g cherry tomatoes, cut in 2 and sprinkle with fine salt.

Set aside.

Stage 2 - 6 min.
Bruschetta and mozzarella
Brush 4 slices bread with a little olive oil on each side, then grill in a frying pan over medium heat.

Set aside.

Stage 3 - 1 min.
Bruschetta and mozzarella
In the same pan, once the bread slices are toasted, pour 4 tablespoons of oil and when hot, add 1 sprig thyme, 1 bayleaf, 1 garlic clove cut in 2 and 2 leaves sage.

Cook for one minute, stirring constantly.

Stage 4 - 5 min.

Add the tomatoes, mix well and cook gently for about 5 minutes.

Stage 5 - 1 min.

Remove and discard the herbs and garlic clove...

Stage 6 - 5 min.
Bruschetta and mozzarella
...and simmer gently for a few more minutes.

Preheat your oven to 200°C (390°F).

Stage 7 - 4 min.
Bruschetta and mozzarella
Place the slices of bread on a sheet of baking paper on a baking sheet.

Spread the tomatoes over the slices of bread.

If you have a little cooking juice left in the bottom of the pan, you can pour it over the tomatoes, or add a delicious sauce, it's allowed ;-)

Stage 8 - 4 min.
Bruschetta and mozzarella
Place a thin slice of mozzarella on each slice...

Stage 9 - 15 min.
Bruschetta and mozzarella
...then bake at 200°C (390°F) for 10-15 minutes.

Stage 10
Bruschetta and mozzarella
Serve warm, with a few basil leaves and a drizzle of olive oil.
Remarks
It's winter and you don't have any tomatoes? Use whole tinned tomatoes cut into pieces.

In summer, cherry tomatoes can be replaced by traditional tomatoes cut into large cubes.
