Step by step recipe


Stage 1 - 5 min.
Chicken "cantina"
Cut 1 kg 400 g chicken breast into medium-sized pieces.

Set aside.

Stage 2 - 5 min.

Stage 3 - 5 min.
Chicken "cantina"
In a large frying pan over high heat, pour in 8 tablespoons oil and when hot add the chicken and 4 tablespoons chilli spices.

Stage 4 - 2 min.
Chicken "cantina"
Brown, stirring occasionally, then add the onion, season with salt and pepper, and mix well.

Cook together for 1 or 2 minutes.

Stage 5 - 20 min.
Chicken "cantina"
Add 1 kg 600 g peeled and chopped tomatoes, 2 bayleaves and 2 cloves garlic, salt and pepper again, and stir.

Lower the heat and cook gently, reducing slightly, for 15 to 20 minutes.

Stage 6
Chicken "cantina"
Check the seasoning, then remove and discard the garlic and bay leaf.

Serve with rice, kidney beans or vegetables of your choice.
Remarks
You can replace the bay leaf with a bouquet garni, for a more delicate taste.

Feel free to adapt the quantity of spices to your taste.
Keeping
1 or 2 days in the fridge, protected by cling film.
