Step by step recipe


Stage 1 - 30 min.
Country-style spring pasta
Prepare 250 ml broad beans, then set aside.

Stage 2 - 5 min.
Country-style spring pasta
Cut 75 ml belly (streaky) bacon into small pieces.

Stage 3 - 5 min.
Country-style spring pasta
In a small frying pan over medium heat, pour in the fat-free lardons and toast, stirring occasionally.

Stage 4 - 3 min.
Country-style spring pasta
Meanwhile, prepare and slice ½ shallot.

Stage 5 - 2 min.
Country-style spring pasta
When the lardons are toasted to your liking, add the minced shallot and 2 leaves sage, season with salt and pepper, then cook for another minute or 2, stirring constantly.

Stage 6 - 10 min.
Country-style spring pasta
Add 100 ml cream, season with salt and pepper and bring to the boil.

Then lower the heat and allow to thicken gently.

Check seasoning.

Stage 7 - 7 min.
Country-style spring pasta
Meanwhile, cook 200 ml Pasta, then drain.

Stage 8 - 2 min.
Country-style spring pasta
Return the pasta to the pan, add the beans and pour over the creamy bacon sauce.

Return to the heat for 1 or 2 minutes, stirring well.

Stage 9
Country-style spring pasta
Your pasta is ready.
Remarks
If you don't have sage, replace it with a bay leaf or a few sprigs of thyme.

If you prefer, you can remove the sage in step 8.
Keeping: 1 or 2 days in the fridge, protected by cling film.
