This salad is based on a traditional Alsatian recipe: cabbage julienne, warm potatoes, bacon, parsley and vinaigrette.

Step by step recipe


Stage 1 - 5 min.
Alsatian-style salad
Prepare 1 green cabbage, raw.

Set aside.

Stage 2 - 8 min.
Alsatian-style salad
Cook 23 cup small pieces of bacon in 1 tablespoon olive oil.

Set aside.

Stage 3 - 40 min.

Steam 3 ½ cups potatoes.

Stage 4 - 5 min.
Alsatian-style salad
Chop 1 bunch parsley.

Stage 5 - 5 min.

Peel the potatoes while still hot, slice and put in a salad bowl.

Stage 6 - 5 min.
Alsatian-style salad
Add the parsley to the hot potatoes, add 5 tablespoons french dressing (vinaigrette), mix well and leave for 5 minutes.

Stage 7
Alsatian-style salad
It's important to do this because the hot potatoes will absorb some of the vinaigrette and parsley flavour, and so will became soft and tasty. Delicious!

Stage 8 - 3 min.
Alsatian-style salad
Add the bacon and cabbage, add more vinaigrette if necessary and mix well.

Stage 9
Alsatian-style salad
Serve immediately. It's better if the potatoes are still warm when the salad is served.
Remarks
You might like to try adding a finely chopped shallot with the parsley, or pouring a little dry white wine over the potatoes while they are still hot.

If you don't like bacon, you can simply leave it out.
Keeping: Several days in the fridge, in a closed jar.
