Step by step recipe


Stage 1 - 15 min.
Piedmont salad
Prepare 1 lb + 5.1 oz tomato and, after cutting into small pieces, salt and leave to wait in a sieve to draw out some of the juice.

Stage 2 - 30 min.
Piedmont salad
Boil 2 lb + 10.3 oz potatoes, peel and cut in half lengthways, then into small pieces.

Stage 3 - 20 min.
Piedmont salad
Slice 12 hard-boiled eggs when cooled.

Cut 10.6 oz cervelas into small dices.

Stage 4 - 5 min.
Piedmont salad
Slice 3.2 oz gherkins in vinegar.

Stage 5 - 3 min.
Piedmont salad
Roughly chop the parsley.

Stage 6 - 3 min.
Piedmont salad
Put all the ingredients into a salad bowl.

Stage 7 - 3 min.
Piedmont salad
Add 1 lb + 5.1 oz Mayonnaise and mix well.

Leave for at least an hour before serving to allow the potatoes to absorb some of the creaminess of the mayonnaise.
Remarks
You can replace the cervelas with another kind of meat or sausage of your choice, but still cut into small dice. For a vegetarian version, just leave it out.

You can replace the mayonnaise with a rémoulade dressing if you prefer. As for all salad recipes, this can be varied to suit your taste (a little more of this or a little less of that).
Keeping: A day or 2 in the fridge if the bowl is covered with plastic film .

  • This has to be my very best favorite way to prepare potato salad. However, jh, I never thought to add cervelas, or any other kind of meat besides ham. Thanks for the clue and sharing...
