Remarks
It is important to use Cheddar cheese, the orange variety keeps the right mood. Use whatever beer you prefer. I like to use a Belgian white beer.

You can also serve Welsh rabbit with a fried egg sat on top (sometimes known as a buck rabbit).
Keeping: Should be eaten right away.
Source: Home made.

Noisette butter
Noisette butter
"Noisette" means hazelnut in French. Noisette butter is made by melting butter, then boiling and raising it to a high temperature until it takes on both a light brown hazelnut colour and also a characteristic nutty smell. Compared with simple clarified butter, this noisette butter has a delicate yet distinctive flavour which is a welcome addition to both savoury and sweet recipes (particularly in cakes and pastries).

Crème brulée
Crème brûlée (burned cream) is quite easy to prepare: it's a simple egg-cream dessert. The only difficulty is in making the delicious crunchy caramel layer on top. The perfect crème brulée (for me) is a cold and soft cream, with on top a nice hot caramel crust. This is a completely new version of the former recipe, with video.
