Step by step recipe

Cabbage


Prepare 300 g green cabbage.

Plunge it into a large pot of boiling salted water...

...and cook until tender, then drain.

Stage 4 - ⌛ 3 min.

Once drained, chop coarsely and set aside.

The ham


Cut 2 slices ham into small pieces and grill in a small frying pan with 1 tablespoon olive oil.

Set aside.

If you haven't already, grate 50 g Parmesan (Parmigiano Reggiano).

Break 8 eggs into a bowl, season with salt and pepper, then whisk.

Add the Parmesan and whisk again.

Add the ham and cabbage and mix with a pastry blender.

In a large frying pan over medium heat, pour in 5 tablespoons olive oil and when hot, pour in the contents of the salad bowl.

Leave to cook slowly until the bottom of the pan is set and the top is still a little doughy.

Then fold the omelette in 2, tilting the pan to facilitate movement.

Stage 11 - ⌛ 5 min.

Turn off the heat and leave the folded omelette in the pan for a further 5 minutes to finish cooking inside.

Serve immediately.
Remarks
This is a recipe with very approximate proportions, so don't hesitate to adapt it to your taste, your habits, or what you have on hand.

If you don't have ham, lardons will work just as well.

As long as you're preparing cabbage, don't hesitate to prepare it whole (as shown in the photos), then take what you need for the recipe, and put the rest aside for another dish.
