Step by step recipe


Stage 1 - 10 min.
Green Piedmont Salad
Prepare 600 ml courgette and dice, or slice into rounds if small.

Stage 2 - 5 min.
Green Piedmont Salad
Dice 450 ml cervelas fairly small.

Stage 3 - 5 min.
Green Piedmont Salad
Chop 1 litre 200 ml cooked potatoes into small pieces.

Stage 4 - 5 min.
Green Piedmont Salad
Put into a salad bowl the courgettes, cervelas, potatoes and finely chopped 150 mls red onion.

Stage 5 - 5 min.
Green Piedmont Salad
Add 12 hard-boiled eggs cut into quarters or sliced and the chopped parsley.

Stage 6 - 3 min.
Green Piedmont Salad
Finish by adding 600 mls Mayonnaise and mix well.

Your Piedmont salad is ready.
Remarks
It is best to use the smallest courgettes you can find as these are crunchier and can simply be sliced.
Keeping: A few hours in the fridge, covered with plastic film.
