Step by step recipe


Stage 1 - 10 min.
Spaghetti with mushrooms
Preheat the oven to 360°F (180°C).

Prepare and cut in 4 in the height 150 g mushrooms.

In an oven-proof dish, spread the mushrooms in an even layer and drizzle olive oil over them. Stir to distribute the oil.

Scatter the shallott over, salt and pepper, then add ½ bayleaf (cut into pieces) and ½ sprig rosemary.

Stage 4 - 30 min.
Spaghetti with mushrooms
Cook in the oven for 20 to 30 minutes, until the mushrooms have given off all their liquid and are starting to brown.

Remove and discard the rosemary and bits of bayleaf.

Spaghetti with mushrooms
Chop ½ shallot.

Cook 200 g Pasta and drain.

Stage 7 - 1 min.
Spaghetti with mushrooms
Heat 1 tablespoon olive oil in a large saucepan over medium heat.

When hot, add the chopped shallot, salt and pepper. Cook for 1 minute.

Stage 8 - 1 min.
Spaghetti with mushrooms
Add the mushrooms.

Stage 9 - 3 min.
Spaghetti with mushrooms
Pour in ½ glass dry white wine and ½ tablespoon soy sauce and bring to the boil.

Stage 10 - 2 min.
Spaghetti with mushrooms
Add the pasta and chopped parsley. Mix well.

Spaghetti with mushrooms
Serve immediately.
Remarks
If you don't have any white wine, you can use a glass of vegetable stock instead, or even just half a glass of water.
Keeping: Should be eaten immediately once plated up.
