Remarks
An interesting combination of flavours is to serve these tuna cubes with something fresh and tangy, such as the carrot salad shown in the photos.

This recipe was devised for tuna, but you could use another fish - salmon, for example - if you prefer.

You will notice that there is no added salt in this recipe. This is because the soy sauce in the marinade, and the curry powder are already salty enough.
Keeping: Should be eaten immediately.

Boiling potatoes in their skins
Boiling potatoes in their skins

The first suggests that potatoes should be always cooked in their skins, to prevent water penetrating and making the potatoes go soft and break up. The second suggests that if potatoes cool in their cooking water, they will absorb some of it, which will give them an unpleasant flavour. True or false? Let's try the...

Roast pork with sage, cooked in a bag.
Pork goes particularly well with sage (true for white meats in general), but in this recipe, we'll bring out these flavours to the full by slow-cooking in a bag. The pork roasting joint is simply salted and peppered before being put in the bag and cooked for hours at low temperature. The delicious cooking juices produced is used for braising the vegetables to serve with the roast: turnips and purple artichokes. In this recipe, everything is done gently and at an unhurried pace: this is real slow...
