Step by step recipe

Quick courgette soup with cheese : Stage 1
Wash 4 courgettes, scrub with scratch sponge, cut ends and discard them.

Stage 2 - ⌛ 10 min.

Slice courgettes fairly thinly (about 1/2 cm. or 1/4 inch), put in a pan, cover with 1 litre water and 1 chicken stock cube, salt and bring to the boil.

Cook until courgettes are quite soft.

Blenduntil smooth.

Stage 4 - ⌛ 3 min.

Add 2 tablespoons Mont d'or cheese, and blend again.

Check seasoning, it's ready !
Remarks
Mont d'or cheese can easily be replaced by other soft cheese like Morbier or Reblochon, or 2 - 3 portions of "Laughing Cow".
